Here are some tried and true recipes that my family love !! Hope you enjoy and Happy cooking !!
Raspberry Truffle Cheesecake

18 Oreos, crushed
2 T. butter, melted
4 8-oz. packages cream cheese, softened
1 1/4 cup of sugar
3 eggs
1 cup sour cream
1 t. almond extract
2 6-oz pkgs semi sweet chocolate chips
1/3 cup raspberry preserves
1/4 cup whipping cream
Combine Oreo crumbs and butter. Press into bottom of 9" springform pan. Combine 3 packages cream cheese and sugar.
beat with an electric mixer on medium speed until blended.
Add eggs, one at a time, mixing well after each. Blend in sour cream and extract: pour over crust.
Melt one package chocolate chips over low heat. Combine with remaining cream cheese and preserves. Mix well and drop by rounded tablespoons over plain cream cheese mixture.
Bake at 325 degrees for one hour and 20 minutes.
Cool; remove sides of pan. Melt remaining chocolate chips with cream over low heat, stirring until smooth. Spread over cheesecake. Chill for 4 hours.

Pink Panther Pancakes

This one is special to me. Growing up my dad always made these in the morning and I just thought it was the best thing ever... and still do !! I make these on the weekends (so easy) for my family and they don't last long !!
5 drops of red food coloring
1 cup of diced strawberries
1 tbsp of vanilla extract
Mix any type of pancake mix as directions state on box. Mix all ingredients above into batter. Cook as usual and serve !!
**To change it up sometimes, I add diced bananas and top pancakes with a little whipcream...

Cinnamon Skillet Apples

1/3 cup butter
1/2 cup sugar
1/2 tsp cinnamon
2 tblsp cornstarch
4 Golden Delicious apples, peeled and sliced
Melt butter in a skillet over medium heat. Stir in sugar, cinnamon and corstarch: mix well and stir in water. Add apple slices to skillet. Cook over medium heat, stir often until tender (usually 8 - 10 mins). Makes 5 servings.

This is my mother-in-law's recipe that my kids LOVE. Everytime we go to visit this is the first thing they ask for when we walk through the door. Guess it's special cause its made with love :) ........
1 Keebler Ready-Crust Graham Cracker Pie Crust
1 8 ounce package cream cheese, softened
1 14 ounce can Sweetened Condensed Milk (NOT evaporated milk)
1/3 cup lemon juice, fresh or bottled (NOT lemon extract)
1 teaspoon vanilla
1 21 ounce can cherry pie filling
Let cream cheese stand at room temperature until softened. In medium bowl, beat cream cheese until light and fluffy. Slowly add sweetened condensed milk, beating until smooth. Stir in lemon juiyce and vanilla until well mixed. Pour into crush. Chill 3 hours until firm and then top with cherry pie filling. Makes 1 pie

Nothing screams summertime like BBQ. Try this great recipes you (and your kids) will love it !!
2 lbs beef chuck roast, cut into 1/2 inch slices
1/2 cup onion chopped
2 cloves garlic, minced
2 cups ketchup
1/4 cup Worcestershire
1 tsp mustard
1/2 tsp salt
1/4 tsp pepper
Combine all ingrediants in a slow cooker. Mix well. Cover and cook on low setting for 6 to 8 hours, stirring occasionally until meat is tender. Makes 6 to 8 sandwiches.

Black and Blue Cheese Stuffed Burgers

1- 1/2 GROUND BEEF
1 t. WORCESTERSHIRE SAUCE
2 T. DIJON MUSTARD
1/2 t. pepper
4 to 6 slices bacon, crisply cooked and crumbled
4 oz. crumbled blue cheese
Garnish with sliced red onion, sliced tomato and lettuce
Combine first 4 ingredients. Mix lightly and form into eight, 1/2 inch thick patties. Stir together bacon and blue cheese; set aside 1/3 of mixture for topping . Spoon remaining mixture onto centers of 4 patties. Top with remaining 4 patties; press edges together to seal. Grill over medium high hear to desired doneness. 5 to 6 minutes per side, topping with reserved bacon mixture when nearly done. Serve burgers on buns and garnish as desired. Makes 4 burgers....yummy !!
Nancy's Grilled Salmon Fillet with Sesame and Soy

2 tablespoons Dijon mustard
3 tablespoons dark brown sugar
2 tablespoons Soy sauce
1 teaspoon each sesame oil and sesame seeds (optional) I don't use this, and I think it's good without it.
Two 5-7 oz salmon fillets or 4 small salmon steaks (I like the fillets better because the steaks seem to have more bones.)
Brush skin side with olive oil and broil/grill 1 minute to remove skin. Combine 1st five ingredients and stir in one tablespoon of water. Heat grill or pan to medium high. Brush salmon with olive oil, salt, and pepper. Grill 5 minutes one side, brush with 1/2 of soy sauce mixture and turn. Brush other side with soy sauce mixture for 5 minutes until done. Serves 4. I usually half all of this as that is enough for two people.

1/2 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/2 teaspoon dill weed

Summer Greek Pasta Salad

This is my personal recipe that is always requested at all parties and cookouts....you can omit any of the ingredients if you like and it still turns out great everytime and sooo simple....
1 box of Kraft classic pasta salad mix
1/2 cup of Zesty Italian Dressing
1 box of crumbled feta cheese
1 small can of black olives-sliced
1 cucumber-diced
1 tomato-diced
Cook pasta according to directions on package and rinse with cold water after cooked. Mix Pasta with remaining 5 ingredients and serve chilled. My all time favorite recipe !!!

Southern Chicken Casserole

This recipe has been in my family for years and makes a great side dish or even as the main course !!
Taste even better the 2nd day (and 3rd ) !!
2 6-oz pkgs chicken flavored stuffing mix,prepared
2 1/2 to 3lbs cooked chicken, cubed
1 c chicken broth
1 can cream of celery of cream soup
1 can cream of chicken soup
Combine soups and broth in a bowl. Set aside. Place half of chicken in a lightly greased 13 x 9 casserole dish. top with half of stuffing and half of soup mixture. Repeat layers, ending with soup mixture. Bake uncovered at 350 degrees for one hour. Makes 10 servings

Baked Tortilla Chips (from scratch)

This is probably the healthiest version of these chips. Much better than deep fried and oily. My kids love these !!
Sprinkle 4 tortillas with 1/8 teaspoon salt; cut into quarters. Place each set of quarters between paper towels on plate in a single layer. Microwave on high 2 minutes or until crisp
I also sprinkle some seasoning salt on top for a little "kick"
